Vegan Polenta Pizza Bites

During the holidays, I’m always on the lookout for party-friendly recipes that are super easy to make. This polenta pizza bite recipe is one of my favorites! It reminds me of the Bagel Bites I had as a kid, but more nutritious and delicious. These are great for both kids and adults.

Ingredients:

  1. Package of pre-cooked polenta (sold at most grocery stores—it comes in a tube as shown in the video above)
  2. Bottle of pizza sauce or tomato sauce
  3. Package of mozzarella Daiya cheese shreds

Instructions:

Using a sharp knife, slice the tube of polenta into rounds about a half-inch thick. Place the slices of polenta on an oiled baking sheet. Top each with a spoonful of tomato sauce and a generous sprinkle of vegan mozzarella cheese. Bake at 400 degrees until the cheese is completely melted. Remove from the oven, serve, and enjoy!
