Ever since I became vegan, I’ve had
a fascination an obsession with mac ‘n’ cheese. This rich gooey dish not only elicits happy memories of childhood, but it is like a giant BOO-YA in the face of anyone who has ever said: “I could never go vegan because I couldn’t give up cheese.”
OK, so 6 years ago that was me doubting I could ever let go of the fatty coagulated bovine by-product, but it’s so funny to me now, because there are countless varieties of vegan cheeses that taste equally delicious. There is even an entire cookbook dedicated to make-your-own artisan vegan cheese!
